Tacos

Ground Beef Tacos
  • 2 pound ground beef
  • 2 teaspoon ground cumin
  • 2 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon chili powder
  • 1 teaspoon salt
Pico
  • 1 pint cherry tomatoes, quartered
  • ½ sweet onion, diced
  • ¼ cup cilantro, chopped
  • ½ lime, juiced
  • pinch of salt and pepper
  • 1 teaspoon black pepper
Toppings
  • Mozzarella, shredded
  • Monterey Jack, shredded
  • Sour Cream
  • Lettuce, jullienned
  • Avocado, mashed or sliced

Steps:
Pico
1. Prepare the pico first dice tomatoes, onion, and cilantro and place in a small bowl.
2. Add lime juice, salt, and pepper.
3. Toss the ingredients together and cover the bowl so that the pico marinates, 

Meat
1. Heat oil in a pan/sjillet if cooking turkey or chicken. Beef is fatty on its own. When the pan is hot, add the meat and break it up with a spoon. 
2. Stir the meat until it starts to brown.
3. Add spices and salt to the meat and continue cooking until fully browned. 

Serve
1. Cook flour tortillas on a lightly oiled skillet. You can also bake the tortillas.
2. Layer the ingredients in the taco.
3. Fold the taco and enjoy!

UPDATE We made our tacos using skirt steak and ground turkey. Nicole showed us how to make homemade tortillas and she made tacos at home too. This was fun! See you next time!
