Three Delicious Breakfast Options

Western Omelette 
  • 12  eggs
  • salt and seasonings (personal preference)
  • 1/4 cup unsalted butter
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 5 oz of ham, diced (about a cup diced)
  • 1 onion, chopped
  • 1/2 cup grated cheese (I like mozzarella or cheddar but it is your choice)
1. In a small bowl, beat together 3 eggs and season them to your taste. Set these aside aside.
2. In a small nonstick pan, heat 3 tablespoons of butter on medium heat.
3. Add the bell peppers and cover the pan with the lid. Cook for about 3 minutes. When the peppers are soft, uncover and raise the heat to medium-high. Next, add the ham and scallions and cook, stirring frequently, until hot, about 1 minute. Transfer the mixture to a bowl.
4. Melt 1/4 teaspoon butter in the pan over medium heat and add 1/4 of the pepper mixture. Pour in the beaten eggs and cook, stirring until cooked.
5. Turn off the heat and, use a rubber spatula to smooth the omelette so that it covers the inside of the pan. Sprinkle cheese and let the omelette rest for a minute.
6. Fold the omelette in half, and serve on a warm plate. You should be able to make four omelettes in all.


Mrs. Shelly's French Toast
  • 1 cup of half and half
  • 3 eggs
  • 2 tablespoons of sugar
  • pinch of salt
  • 1 teaspoon of vanilla extract
  • 8 slices of toast
  • 1 teaspoon of cinnamon
1. Preheat the oven to 375 degrees Fahrenheit. In a bowl that is large enough for the toast, beat the eggs with a whisk.
2. Add the sugars and whisk until mostly dissolved.
3. Add the half and half, salt, cinnamon, and vanilla. Whisk well.
4. Soak a slice of bread in the egg mixture for 30 seconds on each side.
5. Place the slice on a wire rack to drip the excess. mixture.
6. Heat your pan over medium low heat and use cooking spray or butter.
7. Cook each side of french toast for 2 minutes on each side.
8. Place the toast on a baking sheet
9. Repeat steps 4-8 with remaining slices of bread.
10. Bake in the oven for 5 minutes.

Mr. V's Waffles
  • 2 1/4 Cups All Purpose Flour
  • 1 Tablespoon Baking Powder
  • 3 Tablespoons Sugar
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Cinnamon
  • 1/2 tsp nutmeg
  • 2 Large Eggs Separated
  • 1/2 Cup Vegetable Oil
  • 2 Cups Milk
  • 1 Tablespoon Vanilla Extract
  • Fruit toppings
  • whipped cream
1. In a large bowl whisk together the flour, baking powder, sugar, salt, and cinnamon.
2. In a medium bowl beat the egg whites with a hand mixer until stiff peaks form. Set aside.
3. In a separate medium bowl mix together the egg yolks, vegetable oil, milk, and vanilla extract.
4. Add the egg yolk mixture to the dry ingredients and mix well.
5. Fold in the egg whites.
6. Pour the batter onto your hot waffle iron half cup at a time and cook until the light clicks off.
7. Plate with fruit, butter, syrup, and whipped cream.
